		<description>Hey, I just wanted to point out the boiling of the milk/cream for this recipe (and just about every of Jeni&#039;s recipes). It&#039;s actually bring to a rolling boil, and then continue to cook for an additional four minutes. Then once the thickening slurry is incorporated, bring to boil, and cook for one more minute.

This is how she demonstrates in the video that is with the eBook, and the purpose is to cook off the moisture to concentrate the butterfat.</description>
